The internet is awash with foodies and non-foodies alike making their own versions of the beautiful Dalgona coffee. The origins of the coffee can be found in Wikipedia and I believe COVID-19 played an enormous role in people trying out this creation at home.
We have time on our hands. The coffee shops are closed or running limited service. It’s time for us to take matters into our own hands and create beautiful coffee at home. Chocolate cookies on the side are optional.
The beautiful Shilpa of Soulful and Healthy shared a beautiful pic of her Dalgona coffee and I was inspired to recreate my own dairy-free version for those, like me, who have lactose intolerance.

Ingredients
250ml soya milk
2 tbsp granulated sugar
1.5 tbsp instant coffee
2 tbsp boiled water
Cocoa powder, optional
Method
Place the milk in a small saucepan and heat over a low temperature.
Whisk the sugar, coffee and water in a jug or bowl until thick and creamy. This takes 3-4 minutes with an electic beater and up to 10 minutes with a hand whisk.
Pour the warm milk into a glass, top with the creamy coffee and a sprinkle of cocoa powder, if desired.
To make an iced coffee. Use cold milk with ice cubes in the glass instead of warm milk.
