National Milk Chocolate day takes place on the 28th July every year. A couple of years ago, in honour of this special day I decided to whip up a batch of these delicious double chocolate chip cookies using rich cocoa powder and smooth milk chocolate chunks 👌
As tradition goes, these cookies are delicious dipped into a glass of cold milk. Although I do love to dip them into a mug of hot milky coffee.

Ingredients
50g margarine, softened
50g dark brown sugar
50g caster sugar
1 egg
1 tsp vanilla essence
125g self-raising flour
25g cocoa powder
1 tsp bread soda
Pinch of salt
1 tsp instant coffee
100g chocolate chunks
100g icing sugar
1 tsp vanilla essence
1/2 tsp water
Method
Preheat the oven to 180C.
Cream the margarine and sugar until light and fluffy.
Add in the egg, vanilla and 1 tbsp flour. Mix well until combined and smooth.
Sift in the remaining dry ingredients and mix to combine. Mix in the chocolate chunks.
Allow to chill in the fridge for at least 15 mins if possible.
Arrange 10 cookies onto 2 baking trays.
Bake for 10-12 mins in the preheated oven. Allow to cool slightly and firm up on the baking trays before transfers to a wire rack to cool completely.
To make the icing, combine the icing sugar, vanilla essence and water to make a thick but pourable icing. Drizzle over the cookies and allow to set before serving.
