S’more Cookies

I was finishing up in work one evening, planning on going to a yoga class on my way home. To my horror, when I looked at the timetable, I realised the scheduled class was one of my least favourite classes. I expressed my (genuine) sadness to those around me, when one of my work colleagues said he’d come visit my new house (I’ve been there for three months but it still feels relatively new).

Heading off with a spring in my step, I popped by the shop to pick up some biscuits – sure you can’t have someone in for tea without offering them a biscuit. Standing in the biscuit isle, confused about what was the nicest (Chocolate Digestives, Custard Creams or maybe bars instead of biscuits?), I thought “Sure why not bake something?”

Flour, chocolate chips and caster sugar in hand, I headed home where I knew I had butter and eggs in the fridge to bake a batch of Chocolate Chip Cookies. When I got home I realised I had some mini marshmallows, hence the recipe became S’more Cookies.

Trays lined. Oven preheating. Utensils out. Ingredients out. Only then did I realise that I didn’t have a weighing scales. Three months in the house and I still keep forgetting to buy a set. I was too far gone in the process. I had to continue. I eye-balled the quantities. I wouldn’t recommend it, albeit they tasted fab.

Ingredients
150g butter
160g caster sugar
1 egg
1 tsp vanilla essence
230g self-raising flour
100g milk chocolate chips
35-40 mini marshmallows

Ingredients
Line two bakes tray with grease proof paper. Preheat the oven to 180C.

In a large bowl, cream together the butter and sugar until light and fluffy.

Beat in the egg and vanilla.

Mix in the flour and chocolate chips until combined. Add a splash of milk, if necessary, to bring the dough together.

Roll the dough into 13-14 balls, place on the bake trays and bake in the preheated over for 8 minutes, after which, remove from the oven and stick 3-4 mini marshmallows into the top of each cookie. Return to the oven for a further 4-5 minutes until the marshmallows are melted and the cookies are golden.

Allow to cool slightly and harden before transferring to a wire rack to cool completely. Serve with a dusting of icing sugar, optional.
