One of the many recipes that I made during COVID. This very of my cookies was made just before lockdown 2.0 took hold in Dublin during September. In this crazy world we’re living in one this is constant, my love for baking.
This recipe is my basic cookie recipe and you’re very welcome to make additions and changes as you wish. Maybe you’d like to use dark chocolate or white chocolate. Maybe you’d like to add peppermint essence instead of vanilla essence. The choice is yours. Here’s my orange chocolate variation if you wish.
This cookies won me the coveted title of best housemate. Need I say any more!

Ingredients
135g margarine, softened
190g caster sugar
1 egg
1 tsp vanilla essence
275g self-raising flour
1 tsp baking powder
Pinch of salt
400g Cadbury’s Milk Chocolate
Method
Preheat the oven to 180C.
Cream the margarine and sugar until light and fluffy.
Add in the egg, vanilla and 1 tbsp flour. Mix well until combined and smooth.
Sift in the remaining dry ingredients and mix to combine.
Chop up 100g of the chocolate bar and stir in the chocolate chunks.
Allow to chill in the fridge for at least 15 mins if possible.
Arrange 8 cookies onto 2 baking trays.
Bake for 10-12 mins in the preheated oven. Allow to cool slightly and firm up on the baking trays before transferring to a wire rack to cool completely.
Melt the remaining chocolate and dip in one side of each of the cookies to create a deliciously thick chocolate topping. Allow the chocolate to set before enjoying with a glass of milk or mug of tea/coffee.
