White Chocolate Cheesecake

By request of my brother on his 19th birthday – a white chocolate cheesecake.

I’m not a big fan of cheesecake myself but I’ve made a few different ones by request of the fam bam. Baileys and Maltesers is by far my fave if I had to choose. That said, this white chocolate cheesecake is pretty tasty too!

An alternative option is to serve the cheesecake with a drizzle of homemade berry compote. Very refreshing and tasty.

Ingredients
300g digestive biscuits, crumbed
150g butter, melted
300ml fresh cream
75g icing sugar
250g mascarpone cheese
300g full-fat vanilla yogurt
300g white chocolate, melted
Milky Bars, to decorate

Method
Mix together the biscuit crumbs and melted butter and press into a loose-bottom round tin. Set in the fridge while making the filling.

Beat together the cream and icing sugar until thick before gradually beating in the remaining ingredients.

Spread the filling over the biscuit base and set in the fridge for at least 7-8 hours or overnight.

Decorate with Milky Bars, if desired.
