This vegan granola was very easy to make and equally as tasty. Delicious simply with fruit and yogurt for brekkie or as a crunchy topping for smoothie bowls 🍓🍌

170g porridge oats (I used Flahavan’s)
100g mixed nuts, seeds & dried fruit (I used peanuts, cashews, poppy seeds and dates)
1 tbsp maple syrup
3 tbsp sunflower oil
1 tsp vanilla essence
1 tsp mixed spice
1/4 tsp salt
Preheat the oven to 200C.
Mix together all of the ingredients in a large mixing bowl.
Spread evenly on to one or two baking trays and bake in the preheated oven for 20 minutes, making sure to stir regularly to prevent any burning.
Once completely cool, transfer to a clean, dry jar/Tubberware and enjoy the beauty of granola
