Vegan. Thoughts immediately turn to meat, eggs and fish. However, many would forget that sometimes bread is not vegan-friendly, especially homemade loaves which often contain eggs and/or milk.
This vegan-friendly brown bread is really simple to make, albeit you need to allow time for proving. Don’t be turned off by the proving process, it is entirely worth the wait. If you would like a sweeter bread, try out my vegan-friendly coconut bread.

Ingredients
2 tbsp caster sugar
480ml warm water
520g wholemeal flour
1/2 tsp salt
1 sachet (10-11g) instant yeast
Method
Grease a 2lb loaf tin.
Dissolve the sugar in the warm water and set aside.
Place the flour, salt and yeast in a large mixing bowl, keeping the salt and yeast to separate sides of the bowl.
Make a well in the centre and gradually add the water to form a smooth dough. Do not knead.
Tip the dough into the prepared tin, cover with cling film or a plastic bag and leave to rise for 20-25 minutes, until the dough has risen to almost touch the top of the tin. While this is happening, preheat the oven to 200C.
Remove the cover and bake in the preheated oven for 40 minutes. Remove from the tin, wrap in a clean tea towel and allow to cool for at least 30 minutes before cutting.
