When I was a child I was a very fussy eater. Fruit and vegetables were not common features on my plate. Then started the popularity of the smoothie bar and slowly but surely I became more willing to incorporate these “items” into my diet.
To this day, my favourite smoothie to order is a “Strawberry Blonde”. Maybe it’s because I’m a gingernut myself. Maybe it’s because I love the thick texture provided by the banana and the sweetness from the strawberries.

Even when making smoothies at home, this is one of my faves. Although, sometimes I like to swap the strawberries for blackberries when the hedgerows of Monaghan are blooming towards the end of the summer.

In this recipe I have used almond milk because it suits me best. Coconut milk works exceptionally well as it gives a little Piña Colada twist – pass the mini umbrellas please! Dairy milk is perfect to use in this recipe and is the best choice if you don’t want other flavours overpowering the fruit.

Ingredients
200g frozen strawberries, thawed
1 ripe banana
200ml milk of choice
1 tbsp honey (optional)
Method
Put all the ingredients for your chosen smoothie into a food processor or blender, then process until smooth and thick.
Serve immediately between 2 chilled glasses.
