Just after Halloween we finally got moved into our new house and I am over the moon. I have a beautiful new kitchen, with a pantry and two ovens. After living in rented apartments and shared houses for the last 12 years, it feels wonderful to have a kitchen I can now call my own. What makes me even happier is that the new ovens are running bang on temperature so there’s no risk of over or under-baking.

These cookies are slightly different to my usual recipes. These ones have a soft, almost bread-like centre. They feel like a cross between a cookie and a rock cake maybe. The addition of cinnamon, in my opinion, reminds me of a carrot cake – you might entirely disagree with this.

Ingredients
100g margarine, softened
100g soft light brown sugar
2 eggs
1 tsp vanilla essence
120g self-raising flour
4g cinnamon
120g oats
100g chocolate chunks
Method
Line a baking tray with parchment paper. Preheat the oven to 180C.
Cream together the margarine and sugar until light and fluffy.
Beat in the eggs and vanilla essense.
Fold in the flour and cinnamon, followed by the oats and chocolate.
Allow to chill for at least 15 mins before dividing into 9 generous sized cookies on the lined baking tray.
Bake for 12 mins and leave to cool on the baking tray before storing in a biscuit tin.
