Stir fry is one of my favourite dinners. It is always so quick and there are so many variations to make – veggie, vegan, beef, chicken, turkey, tofu… The options are endless really.
For this recipe I’ve used my favorite veggies – red pepper, garlic and onions. The noodles are tossed in sesame oil which has such a fabulous flavour and the sprinkling of white and black sesame seeds gives gorgeous texture and aesthetics.

Ingredients
1 tbsp vegetable oil
1 red onion, thinly sliced
1 white onion, thinly sliced
3 garlic cloves, thinly sliced
1 tbsp soy sauce
Juice of one lime
1 tsp soft light brown sugar
1 noodle nest
1 tbsp sesame oil
1/2 tsp mixed sesame seeds
Method
Heat the oil over a medium heat.
Stir fry the vegetables for 5-10 minutes until they begin to soften.
Mix in the soy sauce, lime juice and sugar and allow to simmer while cooking the noodles according to packet instructions.
Drain the noodles once they are cooked, pop the noodles back into the emptied saucepan and coat in the sesame oil.
Toss through the cooked veggies.
Serve immediately, sprinkled with the sesame seeds.
