Savoury Granola

I’m moving out of my current house in Dublin in the coming months and I’m starting my clear out of ingredients and bits and pieces that are lurking in my press. This week I started with a bag of oatmeal and seeds that I normally use for bread. I was inspired to bake savoury granola after finding a recipe online from @balanceandbolus.

Ihad never made savoury granola before and I was intrigued by the idea. I can safely say now that I am 100% on board. This granola is packed with flavour and it is a gorgeous contrast of textures when sprinkled on scrambled eggs or cottage cheese, or both if you are like me and enjoy the two together!

Ingredients
250g pinhead oatmeal
3 tbsp chia seeds
3 tbsp pumpkin seeds
3 tbsp sunflower seeds
3 tbsp sesame seeds
1 tsp salt
1 tsp pepper
1 tbsp curry powder
50ml olive oil
3 tbsp honey

Method
Preheat the oven to 160C.

Mix together all of the dry ingredients in a large mixing bowl.

Pour in the oil and honey, mixing well to coat all of the oats and seeds.

Spread across a baking sheet and bake in the oven for 25 minutes, stirring regularly.

Cool completely before transferring to an airtight container.
