Salted Caramel Apple Crumble

This salted caramel apple crumble is absolutely delicious and a true taste of autumn. I came across a similar recipe in the September 2019 edition of Easy Food and I have adapted it to suit the ingredients that were available to me.

If you can’t find salted caramel essence, don’t worry. The apples will take on a caramel taste and texture when stewed with the sugar and butter. I picked up my bottle of salted caramel essence in Tesco.

Ingredients
For the apples;
3 large cooking apples
1 tbsp lemon juice
1 tbsp cornflour
1 tsp salted caramel essence
30g butter, cubed
125g granulated sugar
100g soft dark brown sugar

For the crumble:
120g plain flour
90g butter, softened
60g soft dark brown
60g granulated sugar
30g oats
1/4 tsp cinnamon

Method
Peel, core and thinly slice the apples.

Place the apple slices in a large saucepan with the lemon juice, cornflour and salted caramel essence. Mix to coat the apples in the juice and cornflour. Break the butter into small pieces and add to the saucepan along with the sugars.

Stew the apples over a low heat for 20 minutes. Set aside to cool. Preheat the oven to 180C.

Using clean hands, rub the butter into the flour. Stir in the sugar, oats and cinnamon.

Place the stewed apples in a casserole dish and sprinkle over the crumble. Bake in the preheated oven for 25-30 mins until the crumble is golden and the apples are bubbling.
