Ruby Chocolate Oat Cookies

I recently came to be in possession of quite a lot of ruby chocolate. If you’ve never tasted ruby chocolate, I recommend you run out now and get yourself some. It’s delicious. Smooth and sweet, very like white chocolate, and a beautiful shade of pink.

I love oat cookies. Anyone who has followed my blog for a while will know that. On here I have oat and raisin cookies, oat and almond cookies and oat and apple cookies. And now it’s time for something new – ruby chocolate oat cookies.

Ingredients
115g butter
125g soft brown sugar
1 egg
1 tsp golden syrup
100g self-raising flour
120g oats
100g ruby chocolate, chopped

Method
Cream together the butter and sugar.

Beat in the egg and golden syrup.

Fold in the flour, oats and chocolate.

Chill in the fridge for a couple of hours, if possible.

Preheat the oven to 180C.

Transfer onto two baking trays lined with baking paper – you’ll fit six cookies onto each tray.

Bake in the preheated oven for 10-12 minutes.

Allow to cool slightly and firm up on the tray before transferring to a wire rack to cool completely.
