What’s better than getting a gift? Getting a gift that you can eat, of course. As a baker, nothing pleases me more than being able to share my love for baking and my creations with other people.
For years now, I’ve been following the blog of Karyn Ryan, Irish Baking Adventures. One of my favourite recipes from Karyn is her Rocky Road Fudge. My greatest weakness in life is Rocky Road and Chocolate Biscuit Cake and it really comes as no surprise that I was super excited to come across this recipe.

At Christmas time, I love to make this fudge for Secret Santa gifts. It is especially useful for workplace gifts where you may not know the person’s interests. I just assume that most people like chocolate! One watch out, if you’re giving food as a gift, be sure to check out if the recipient has any allergies. This recipe can be made gluten free by using gluten free biscuits.

Ingredients
300g milk chocolate
1 tin condensed milk
25g butter
1 bag mini marshmallows
100g digestive or ginger biscuits, broken
Method
Line a 8″ square baking tray with a double layer of cling film.
Place the chocolate a a butter in a large mixing bowl over a pan of barely simmering water and melt. Once melted stir in the condensed milk until combined. Mix in the biscuits.
Remove from the heat and stir in a good handful of the marshmallows.
Press in to the prepared tin and stick more mini marshmallows on top. If you have any festive sprinkles add these on top now too. Set in the fridge for at least 2 hours (ideally overnight) before cutting into 30 mini fudge pieces.
