For sure, Galentine’s Day has kicked off in recent years. February 14th is a day for spreading love, be that with your partner, your friends or even your pet. These Peanut Butter Squares were my Galentine’s treats for the gals who keep me sane every day, my work pals.
My experience making these Peanut Butter Squares using gluten-free flour has been unsuccessful. The gluten-free biscuit cake completely shattered. In this instance, stick with the recipe below which is loosely based on one from Easy Food Magazine.

Ingredients
125g butter
60g caster sugar
125g plain flour
50g cornflour
200g peanut butter
150g milk chocolate
150g peanuts
Method
Grease and line a 7X7″ cake tin. Preheat the oven to 180C.
Cream together the butter and sugar until light and fluffy.
Beat in the plain flour and corn flour to form a dough.
Press the dough into the prepared cake tin and bake in the preheated oven for 20 minutes. Allow to cool in the tin.
When the biscuit base has cooled, spread over the peanut butter and set in the fridge.
Melt the chocolate and pour over the peanut butter.
Finish with a sprinkle of peanuts.
Allow to set for at least two hours before cutting.
