Really, nothing says party like hundreds and thousands. For my 25th birthday I made a sprinkles cake and ever since, I use this method of decorating for many celebrations.
These sprinkles cupcakes are loved by adults and children alike for a birthday treat. You could swap out the vanilla essence for lemon or orange zest for a fruity cupcake or add a teaspoon of jam to the centre of each cupcake before baking.

Ingredients
8oz margarine, softened
8oz caster sugar
4 eggs
1 tbsp milk
1 tsp vanilla essence
11oz plain flour
2 tsp baking powder
4 heaped tbsp icing sugar
1 tbsp water

Method
Line two 12-hole muffin tin with paper cases. Preheat the oven to 180C.
Cream together the margarine and sugar.
Beat in the eggs one by one along with the milk and vanilla.
Fold in the flour and baking powder until smooth.
Place one heaped tablespoon of mixture into each baking cake – your mixture should give you approx 15 muffins.
When the muffins are baked and cooled make the icing by mixing together the icing sugar and water to make a thick icing. If the icing is too thick to spread, add another 1/4 tsp of water.
Spread the icing on the cupcakes and dip into the hundreds and thousands.
Allow the icing to set before eating.
