Overnight Oats

Overnight oats can be made the night before and are perfect if you find yourself tight for time in the mornings. I love this combination of banana and berries although adding a little sprinkle of desiccated coconut can be delicious too.

Soaking the oats in milk, as opposed to water, and adding seeds boosts the protein content of the overnight oats to help keep the belly feeling fuller and the brain concentrating for longer!

30g porridge oats
10g whole chia seeds
100ml milk of choice (dairy or non-dairy)
1 banana, peeled and frozen
1 tsp blackberry jam

Mix the oats, chia seeds and milk together in a bowl and transfer to an airtight container or jar. Leave in the fridge overnight.

In the morning, mash the frozen banana with jam and layer on top of the oats. Finish with an extra swirl of jam, if desired.
