No-added Sugar Banana Bread

After Wellfest 2019, I came home with a bag of delicious goodies and treats. One of which was a Blue Machine Naked Juice. The use-by-date is great on them and it sat in my fridge for a few weeks.

When I finally got around to trying it, I was very pleased with the taste. However, I felt that I wanted to get creative and began to consider how I could use a Naked juice in my baking. The No-added Sugar Banana Bread was born.

Ingredients
350g wholemeal flour
150g self-raising flour
1 tsp baking powder
750ml Blue Machine Naked juice
125g natural yogurt
2 ripe bananas, mashed

Method
Grease and line a 2lb loaf tin. Preheat the oven to 180C.

Mix the dry ingredients together in a large mixing bowl and make a well in the centre.

Add in the juice, yogurt and banana and mix well until combined.

Transfer to the prepared tin and bake in the preheated oven for an hour. Remove from the tin, wrap in a clean tea towel and allow to cool before cutting.
