I’m always on the lookout for weekend brunch inspiration that I can recreate at home 🙋🏼 During the summer, after working at an event in Dublin Zoo, myself and a few of my colleagues went to The Lo-cal Kitchen in Castleknock for lunch. Here I enjoyed some of the best hummus on brown bread ever!
I headed home with a fully belly and the intention of recreating this beautiful meal at home. The following weekend, I whipped up a batch of homemade hummus and enjoyed it on toasted soda bread ❤️ In my mind, there’s not many things that beat the smell of toast on a weekend morning 💋🔥
To make this meal gluten free, opt for gluten free bread, corn cakes or rice cakes. The smooth texture of the hummus is a perfect contrast to the crunchy base of the corn/rice cakes.

For added flavour, any or all of the following are a great addition – salt, pepper, red chilli flakes, paprika and/or Italian herbs 🍴

Ingredients
1 tin of chickpeas, drained and rinsed
Juice of half a lemon 🍋
1/2 red pepper, diced
Method
Mash the chickpeas with the lemon juice until your desired consistency is achieved.
Mix through the diced pepper and season to taste.
Alternatively, place all the ingredients in a blender/food processor and blitz until your desired consistency is achieved, adding more lemon juice if you need to.
