I decided to make these flapjacks when I was visiting my friend’s family home for the first time. With two dietary requirements, coeliac and vegan, I had to get my thinking cap on.
With thanks to gluten-free oats and dairy-free butter, I was delighted to present these to my friend’s parents. Who doesn’t love receiving edible gifts?

Ingredients
250g vegan butter or margarine
200ml golden syrup
25g caster sugar
1 tsp vanilla essence
500g gluten-free oats
30g whole chia seeds
75g dark chocolate chunks
Method
Grease and line a shallow 11X7″ cake tin. Preheat the oven to 180C.
Melt the butter/margarine, syrup, sugar and vanilla in a large saucepan.
Mix the oats, chia seeds and 25g chocolate chips into the melted mixture.
Press into the prepared cake tin and bake in the preheated oven for 25-30 minutes.
Remove from the oven and sprinkle over the remaining chocolate chunks, allowing them to melt in the residual heat.
Allow the flapjacks to cool completely in the tin before cutting into 15-20 pieces.
