This recipe originated as a gluten free Rice Krispie Treats for one of my good friends who is Coeliac (she’s also my hand model in the image below!). However, you can happily substitute the gluten free Rice Krispies for regular Rice Krispies.
You may find that the marshmallows are taking ages to melt. You may feel ready to give up. Don’t. These Rice Krispie Treats are worth the patience. The melted marshmallows make them deliciously chewy and are naturally gluten free.
Experiment with the recipe by swapping the white chocolate for milk or dark chocolate. I recommend using a cooking chocolate as they are more heat stable than non-cooking chocolates.

Ingredients
45g butter
200g marshmallows
100g white chocolate
250g Gluten Free Rice Krispies
Edible glitter or sprinkles (optional)
Method
Grease and line a 13″ X 9″ cake tin.
Melt the butter and marshmallows in a large mixing bowl set over a saucepan of barely simmering water.
When the marshmallows are almost melted add in the white chocolate and allow to melt to form a smooth mixture.
Stir in the Gluten Free Rice Krispies and mix until well coated. Tranfer to the prepared cake tin, sprinkle with decorations (if desired) and allow to set in the fridge overnight. Cut into 12-16 squares.
