Easy Peasy Poached Eggs & Avocado

I’m 26 years old writing this post and today was the first day that I even successfully made poached eggs. I remember wasting four eggs in college whilst trying to perfect my poaching skills. I gave up that day and never tried again.

Last week, I had take away brunch from Cinnamon Monkstown. I opted for the veggie benedict and decided that day that I was going to try poaching eggs once again. It is a skill I should be able to master! This recipe serves two.

Ingredients
4 eggs
1 ripe avocado
1/4 tsp salt
1/4 tsp cracked black pepper
1 tsp orange juice
4 slices soda bread
Pinch of chilli flakes

Method
Bring a saucepan of water to the boil.

Line up four mugs and crack an egg into each mug.

Swirl the water in the saucepan with a fork to make a vortex and quick drop in one egg.

Allow the egg to cook for 4-5 minutes before removing with a slotted spoon. Leave longer if you want a harder yoke.

Repeat the process with the remaining eggs.

Mash the avocado with salt, pepper and orange juice and toast the bread.

Spread the avocado over the toast and top each slice with a poached egg and a sprinkle of chilli flakes and pepper.
