I’m 26 years old writing this post and today was the first day that I even successfully made poached eggs. I remember wasting four eggs in college whilst trying to perfect my poaching skills. I gave up that day and never tried again.
Last week, I had take away brunch from Cinnamon Monkstown. I opted for the veggie benedict and decided that day that I was going to try poaching eggs once again. It is a skill I should be able to master! This recipe serves two.
Hope you enjoy!
1 ripe avocado
1/4 tsp salt
1/4 tsp cracked black pepper
1 tsp orange juice
4 slices soda bread
Pinch of chilli flakes
Bring a saucepan of water to the boil.
Line four mugs with cling film, crack an egg into each mug and wrap up into parcels, leaving a “tail” on the end.
Drop the cling film parcels into the boiling water and fold the “tail” over the top of the saucepan to hold the egg in place.
Allow the eggs to cook for 6-8 minutes.
Mash the avocado with salt, pepper and orange juice and toast the bread.
Spread the avocado over the toast and top each slice with a poached egg and a sprinkle of chilli flakes and pepper.
