I have MANY recipes on my blog for cookies. This tray bake takes the humble cookie dough recipe and eliminates the need for shaping into balls. It is super handy. You just tip the dough into a tin, pop it in the oven and bake to perfection.

This was the dessert I made on Mother’s Day and it went down equally well with the parents and kids. We served it with caramel ice cream, and the leftovers were thoroughly enjoyed with a cup of tea.

Ingredients
115g butter, softened
135g soft light brown sugar
55g granulated sugar
1 egg
1 tsp vanilla essence
275g self-raising flour
1 tbsp cornflour
250g chocolate, chunks or chips
Method
Grease and line an 8X8″ square tin. Preheat the oven to 180C.
Cream together the butter and sugars until light and fluffy.
Beat in the egg and vanilla essence, adding 1 tbsp of flour with the addition of the egg.
Fold in the remaining flour and cornflour followed by the chocolate.
Transfer to the prepared tin and bake in the preheated oven for 20 minutes.
Allow to cool completely in the tin before cutting. Store in an airtight container.
