Nothing beats a cookie. They’re super simple to make and can be the carrier of a whole host of wonderful flavours.

This recipe uses one of my favourite ingredients. Dark orange chocolate. Even if you aren’t a fan of dark chocolate, this recipe might still be for you as the sweetness of the cookie balances out the bitterness of the dark chocolate.

Ingredients
120g butter, softened
170g caster sugar
1 egg
1 tsp vanilla essence
230g self-raising flour
100g dark orange chocolate
Method
Cream together the butter and sugar.
Beat in the egg and vanilla.
Fold in the flour and chocolate.
Leave to chill in the fridge for 2-3 hours.
Preheat the oven to 180C and line two baking trays with greaseproof paper.
Divide the cookie dough into approx 12 balls on the lined baking trays and bake for 12-15 mins.
Allow to cool completely on the trays before storing in an airtight container.
