Dark Chocolate Protein Bars

Lockdown 2.0 has me baking again. This time around I’m in Dublin with my housemate. We are both into health and wellness and while we do enjoy brownies, cookies and cake, we are trying to make “healthy” treats too!

These protein bars are inspired by a Daniel Davy recipe for fruit and nut protein bars. We used ingredients that were available to us and the result was wonderful.

This is a no-bake recipe. You may worry at the beginning that the recipe isn’t going to come together but believe me, if you have patience while it sets in the fridge all will be OK. If you like these, check out my breakfast cookies and flapjacks too.

Ingredients
2 tbsp flaxseed + 1 tbsp water (flax egg)
200g porridge oats
200g mixed nuts
200g dark chocolate, chopped
25g vanilla protein powder
2 tbsp desiccated coconut
2 tbsp honey
80ml milk of choice

Method
Grease and line a 7X11″ cake tin.

Make the flax egg by mixing together the flaxseed and water, set aside.

Mix together the oats, nuts, half of the chocolate, protein powder and coconut.

Stir in the flax egg, honey and milk.

Press firmly into the prepared tin.

Melt the remaining chocolate and pour over the bars.

Set in the fridge for at least 3 hours.
