First and foremost, good quality dark chocolate is what you need for this banana bread. I use Green & Black 70% velvet edition here. Secondly, you need mushy, overripe bananas. Both are key to the success of this delicious banana bread.

For the past year and a half banana bread has been on the weekly agenda for many people. It’s funny what lockdown turned us towards.

Ingredients
300g self-raising flour
150g wholemeal flour
2-3 tbsp dark brown sugar
2 tbsp fruit and nut granola
8 walnuts chopped
50g dark chocolate, chopped
3 ripe bananas, mashed
500ml milk or milk alternative
Method
Grease and line a 2lb loaf tin. Preheat the oven to 180C.
Mix together all of the dry ingredients followed by the bananas and milk to form a wet dough.
Transfer to the prepared loaf tin and bake in the preheated oven for 50-60 minutes.
Remove from the tin and wrap in a clean tea towel. Allow to cool completely before cutting.
