I was really grateful to be contacted by Nourish to try out some of the brands they sell in store. First up, I was sent three cartons of Rude Health plant drink – oat drink, almond drink and coconut drink. Having tried all three I have no idea which is my favorite as they all were delicious in their own way.
With the oat drink, I decided to bake a dairy free banana bread. I know we’ve all been seeing banana bread recipes for the past 14 months but hey, no harm having another one for variety. This recipe is super light and fluffy with the granola giving it wonderful tasty and texture.

170ml oat drink
3 bananas, mashed
190g fruit & nut muesli
175g self-raising flour
Grease and line a 2lb loaf tin. Preheat the oven to 180C.
Mix together all of the wet ingredients in a large mixing bowl, followed by the dry ingredients.
Transfer to the prepared loaf tin and bake in the preheated oven for one hour.
Remove from the tin and allow to cool completely on a wire rack before cutting.
