Crispy M&M Cookies

Do you ever have a notion in your head to bake but then you go to the fridge and realise that you’ve only got one egg left? There’s few things you can bake with one eggs, unfortunately. Lemon Drizzle Cake requires three eggs. Cupcakes require four eggs. What to do with one egg?

With one egg you can make a batch of delicious cookies. I use this base recipe to inform all of the cookie recipes on my blog, making adjustments here and there to suit the flavour. In this case, the M&M’s can be easily replaced with chocolate chips or smarties.

Ingredients
100g margarine, softened
150g caster sugar
1 egg
1 tsp vanilla essence
150g self-raising flour
1 tsp baking soda
Pinch of salt
70g crispy M&M’s

Method

Preheat the oven to 180C.

Cream the margarine and sugar until light and fluffy.

Add in the egg, vanilla and 1 tbsp flour. Mix well until combined and smooth.

Sift in the remaining ingredients and mix to combine.

Allow to chill in the fridge for at least 15 mins if possible.

Arrange 8 cookies onto 2 baking trays.

Bake for 10-12 mins in the preheated oven. Allow to cool slightly and firm up on the baking trays before transfers to a wire rack to cool completely.
