Cookie For One

Do you ever fancy a cookie? Just one, single, individual, homemade cookie. The problem is, you don’t want to make a whole batch of cookies. Maybe you don’t have space in your freezer to store surplus cookie dough. Let me help you out with this amazing “cookie for one” recipe. What’s more, it’s egg-free, making it suitable for those with an egg allergy or for when you have no eggs in your house!

The majority of this recipe can be made without kitchen scales. I find it difficult to eyeball butter so I have given the exact measurement below. Everything else is pretty straightforward.

Ingredients
15g butter, melted
2 tbsp caster sugar
Drop of vanilla essence
1 tsp milk
3 tbsp self-raising flour
1 tbsp chocolate chips

Method
Preheat the oven to 180C and place a square of greaseproof paper on a baking tray.

Beat together the melted butter and sugar in a bowl until light and fluffy.

Mix in the vanilla essence and milk.

Fold in the flour and chocolate chips and bring the dough together into a ball.

Place on the greaseproof paper on the baking tray and bake for 10-12 minutes until golden.

Allow to cool before removing from the tray.
