Easter 2021 was our second Easter in lockdown thanks to COVID-19. Last year I made an Easter-themed cheesecake. This year I decided to make a classic Rocky Road, inspired by a request from my brother.
There’s nothing easier than a Rocky Road. You gather your ingredients, you mix them up in a bowl, you press the mixture into a tin and you leave to set. The leaving to set is the hardest part as it requires hours of patience.

Ingredients
450g milk chocolate
1 tin carnation caramel
3/4 pack Digestive biscuits
3/4 pack Rich Tea biscuits
8 marshmallows, halved
6 Twix fingers, chopped
1 sharing pack Maltesers
Method
Line an 8X8″ loose-bottom cake tin with cling film.
Melt the chocolate in a large mixing bowl over a saucepan of barely simmering water.
Mix in the caramel followed by the biscuits.
Remove the bowl from the heat and mix in the marshmallows, Twix and 3/4 of the Maltesers.
Press into the prepared cake tin and push the remaining Maltesers into the top of the cake.
Allow to set for at least 6 hours or overnight before cutting into desired shape and size.
