Want a cake in minutes? This one is definitely for you. I’m all for cooking and baking from scratch but sometimes you just don’t have the time or energy or the desire. Yes, sometimes even the best of us don’t want to bake. This chocolate syrup sponge makes use of chocolate cake mix and the microwave. Convenience is stamped all over this recipe.
Both Betty Crockers Chocolate Cake Mix and Devil’s Food Cake Mix work well here, as do generic branded cake mixes. I use strawberry jam here but the cake is equally delicious with raspberry jam and topped with fresh raspberries.

4 tbsp strawberry jam
½ packet Chocolate Cake Mix
50ml sunflower oil
10 strawberries, hulled and halved
Place the jam in the bottom of a wide, microwave safe bowl.
In a separate bowl, mix together the chocolate cake mix, sunflower oil and milk.
Spread the chocolate mix over the jam and place in the microwave for 8 minutes.
Once cooked, place a plate over the bowl and tip out the cake – the jam side should now be facing upwards.
Decorate with fresh strawberries. Cover leftovers with kitchen foil or store in an airtight container for 3 days.
