I have many recipes saved and it brings me so much joy when I finally get a chance to get the ingredients and try something new. I had a recipe saved for a Bailey’s and coffee chocolate cake. It sounded delicious but I didn’t know if my audience (my family) would actually like it. Instead I worked up something a little different and came up with this delicious chocolate loaf cake.

I love loaf cakes because they are easy to decorate, easy to transport and easy to cut. For any US readers, I’m referring to a pound cake style cake here.

Ingredients
6oz butter, softened
6oz caster sugar
3 eggs
1 tsp vanilla essence
8oz self-raising flour
1 tbsp cocoa powder
Method
Grease and line a 2lb loaf tin.
Preheat the oven to 180°C.
Cream the butter and sugar until light and fluffy.
Beat in the eggs, one at a time along with a tbsp of flour.
Beat in the vanilla essence.
Sift and fold in the remaining flour and cocoa powder.
Transfer to the prepared tin and bake in the preheated oven for approx 50 minutes, until a skewer comes out clean.
Allow to cool in the tin before cutting.
Store in an airtight container.
