After our brief Indian summer, autumn is definitely upon us now. I’m not complaining. I love the cosy dark evenings as much as I love the long summer summer days.
Every summer I go a bit of a hiatus from the blog and baking. There’s more things to do in the summer than sweaty away in a warm kitchen. Now I’m back and my first new recipe for autumn/winter is a delicious batch of chocolate hazelnut brownies.

I personally don’t LOVE hazelnuts but I appreciate that they marry well with chocolate and other people like them. If you don’t want hazelnuts in your brownies, swap for another nut or just add extra chocolate chips instead.

Ingredients
100g dark chocolate
100g butter
150g light brown sugar
2 eggs
70g plain flour
25g chopped hazelnuts
75g milk chocolate chips
Method
Grease and line an 8″ square tin. Preheat the oven to 170C.
Melt the dark chocolate and butter in a large mixing bowl and allow to cool slightly.
Add the eggs and sugar to the melted ingredients and mix to combine.
Coat the hazelnuts and chocolate chips in flour and mix into the wet ingredients.
Bake in the preheated oven for 25-30 minutes, until a skewer comes out clean.
Allow to cool completely in the tin, ideally cool in the fridge as this will set the brownies to a firm fudge texture.
Once cooled and set, cut into your desired size and store in an air tight container.
