Buttermilk Pancakes

Each year, the well-celebrated 4th July gets me thinking about the classic sweet treats that are associated with America! Definitely, my favourite are the classic Buttermilk Pancakes 🥞

This recipe serves three or four people, depending on appetite and love of pancakes. Whether you choose to top with lemon and sugar or simply eat as they are, how you have your pancakes is totally individual and unique to you. The photo above was my Pancake Tuesday 2019 creation, topped with strawberries, pistachio nuts and a drizzle of maple syrup.

Ingredients
135g plain flour
1 tsp baking powder
1 tbsp caster sugar
1 egg, beaten
130ml milk (approx)

Method
In a jug, mix together the dry ingredients.

Make a well in the centre and add in the egg and milk gradually to form a smooth, thick batter.

Cook on a non-stick pan or with a little oil.

Serve with the topping of your choice.
