Rhubarb is one of my favourite seasonal foods of the summer. It grows at the back of my Granny’s house and each year we cut countless stalks, using it for crumbles, tarts, cakes or simply stewed with ice cream or custard.
This breakfast is a delicious way to use rhubarb, other than in a dessert. Bircher muesli is a great breakfast if you are someone who is rushing out of the house in the morning. It takes only minutes to prepare before bed and it ensures that you have a nutritious start to the day. I love to add sliced banana to my Bircher muesli before serving too.

Ingredients
50g sugar-free muesli
150ml milk
2 tbsp stewed rhubarb
Method
Soak the muesli in the milk overnight.
In the morning top with the stewed rhubarb. You may wish to add more milk or some natural yogurt at this point too.
