My family and I are big fans of apple dessert. You will have noticed that from the selection of apple recipes on my blog – tart, crumble, bars, we love them all.

We’ve been making this apple cake in my house for a number of years now and it always goes down well. However, I decided to jazz it up a bit with the addition of orange zest and that was definitely a great decision. The taste is beautiful and so autumnal. Ingredients
2 cooking apples
Zest and juice of one orange
200g caster sugar
200g butter
3 eggs
250g plain flour
2 tsp baking powder
1 tsp mixed spice
2 tbsp brown sugar
2 tbsp flaked almonds
Method
Peel, core and chop the apples. Place in a bowl with the orange juice and cover.
Grease and line the base of an 8″ round springform cake tin. Preheat the oven to 180C.
Cream the margarine, caster sugar and orange zest until light and fluffy.
Beat in the eggs and mix in the flour, baking powder and spice.
Mix in the apples and their juices.
Transfer to the prepared cake tin and sprinkle over the brown sugar and flaked almonds.
Bake in the preheated oven for one hour.
